Grilled Peach and Tomato Salsa

2 peaches, halved and pitted
1 medium red onion, cut into thick slices
a few garlic cloves, tossed with olive oil and wrapped in foil
1-2 ripe but firm heirloom tomatoes
cider vinegar, to taste
salt and cayenne pepper, to taste
handful of cilantro, chopped

Preheat grill. Oil grate and grill peaches, onion slices, garlic, and tomatoes for a few minutes on each side or until lightly charred. Chop everything together, splash with vinegar, and stir in salt & pepper and cilantro. Serve with tortilla chips.

It’s a lot better if you let it rest in the fridge for a day, but I wouldn’t –and couldn’t — turn it down freshly made.
