Snowball Cookies

courtesy of my momWhenever we have time, Mom and I spend part of a day baking cookies for Christmas. This is my favorite of the ones we bake — simple, crispy, and subtly delicious.

2 cups all-purpose flour
2 cups finely chopped pecans
1/4 cup granulated sugar
1 cup butter, softened
1 teaspoon vanilla
powdered sugar

Preheat oven to 325°.

In a large mixing bowl, combine all ingredients except powdered sugar. Beat at low speed, scraping often, until well mixed, about 3-4 minutes. Shape rounded teaspoons into balls and place on ungreased cookie sheets. Bake for 18-25 minutes, or until very lightly browned. Remove from cookie sheet immediately and roll in powered sugar while still warm. Roll cookies in powdered sugar a second time when cool.
